The salad bar at Gapateria isn't quite as extensive as say, the one at Lee's. There are usually only about 10 topping choices (cherry tomatoes, chickpeas, beets, cucumber, carrots...) and 3 different kinds of greens (mesclun, spinach and romaine lettuce).
I usually get a salad when I deem all the other choices unfavorable. I first scan the "al forno" section which includes small pizzas; saute area with burgers, chicken sandwiches, fries and fish; saute station with one special dish of the week, made to order sandwiches and then the salad bar. It's typically my last choice since I find it the least exciting. :X But...it's also the most healthiest. The ingredients all depends on what time you go too. If you go early noon, there will be a lot more choices then if you go later in the day. They rarely refill the containers so you have to go early to get the good stuff. :) I filled my salad bowl (off topic: I really don't love the bowl since the dressing ends up at the bottom and when I'm near the end of my meal, whatever's left on the bottom is drenched with dressing) with mesclun greens (the greener the better! :)), cucumbers, cherry tomatoes, chickpeas, tuna, marinated mushrooms, peas, broccoli and a squash salad in olive oil. As I walked away with my $5 salad bowl, I felt good about making a healthy choice and eating something so pretty and colorful.
