Ingredients (serves 2)

  • 2 tbsp. olive oil
  • 1 clove garlic, finely chopped
  • 200gr pasta
  • Florets of 1 small broccoli
  • 1 small red chili, finely chopped
  • 1 Italian sausage, sliced
  • 6 sun blushed tomatoes, chopped
  • Salt and freshly ground pepper to taste

How to:

Cook the pasta according to the packet instructions. In the meantime bring a large pot of water to boil add the broccoli and blanch for 3 minutes. Drain the pasta and the broccoli. Heat 2 tablespoon oil in large skillet. Add the garlic, chili, sausage and blushed tomatoes and cook for 3-4 minutes. Add the pasta and the broccoli and stir gently.

Season to taste and serve.

About two and half years ago my wife Cheryl and went bear hunting in Northern California.  Cheryl was awesome considering she was 7 months pregnant.  We drove up to Northern Cali, spent the night in a hotel and met our guides and dogs the next morning at about 4am.  We drove to some private property owned by a logging company that our guide had the rights to hunt on.  I have been hog hunting with dogs before but never for bear.  The dogs ride on the top and hood of the trucks as we drive though on the old logging roads.  As soon as the led dog picks up the sent he lets them go.  and off they went.  They ran as far a 8 miles from us, and we tracked them via their radio collars.  When we realized they had stopped moving we kept driving around until we located them.  It was only about a one mile walk to the place where the dogs had treed the bear.  It was however through the forest and uphill.  Cheryl was awesome.  After tying up the dogs, I took a shot, about 300-400 feet directly up into a tree.  I did not have the best shot, it was hard to see, directly up in the air and the bear had wedged himself pretty well around some branches.  The first shot, which would have been perfect if that brown spot was his shoulder and not a branch, but the second and third were pretty good.  They were not kill shots though and the bear got pretty pissed and started to come down the tree.  A shot to the back of the head at about 30 feet with a .44 Mag took him down.  We field dressed him on the spot and carried him back to a picnic table to skin out the hide. Ended up with about 150 pounds hanging weight and a nice hide.  I made the hide into a killer run and the bear meat we used for sausage and lots of braising.

For Thanksgiving this year I decided to forego the turkey, primarily because I thought I would have a whole lamb-- and lamb for thanksgiving sounded great! Alas, the lamb delivery date was moved back and I was stuck. When David said he had rabbits, I jumped! I could do something rabbit-y. As it turns out we're having 25 people so the rabbits alone would not do it--I also bought a half dozen guinea hens--but I could use them for some awesome apps and a first course. 

With David's lovely little rabbits I made a half recipe of rabbit rillettes, a double recipe of rabbit sausage, and some amazing rabbit stock. I kept the kidneys for a terrine later. Ditto on the livers. 

I'm serving the rilletes alongside a pate de campagne that I made this week with chanterelles and black trumpet mushrooms folded in and our tuscan salami sliced on our new slicer (just like Jim's). The sausages I will serve on wilted dandelion greens with fingerling potatoes dressed in light mustard vinaigrette.
