I had a lovely dinner tonight and it was really simple, just some salad, gorgonzola, pear and walnut pieces. But truly yummy!

Recipe for healthy winter salad (serves one):

  • handful of rocket salad
  • handful of iceberg lettuce salad
  • 1 pear, cut in little chunks
  • 50g of gorgonzola (stilton works fine as well)
  • crushed walnuts, sprinkle a handful over the top

I’ve made a quick dressing, just adding balsamic vinegar, olive oil, grapefruit juice, sugar, salt and pepper – mix it, shake it, eat it. Lovely!

Blackened Tilapia with Roasted Corn Salad, Baby Spinach and Lime Vinaigrette

Ingredients

Tilapia, 2 pieces           

Blackening Spice, 2 TB

Fresh Corn, 6 ears       

Tomato, 1 chopped

Jalapeno, 1 minced     

Cumin, 1 tsp

Chili Powder, 1 tsp  

Salt and Pepper, to taste

Lime, 1 juiced                

Extra Virgin Olive Oil, 2 TB

Fresh Spinach, 1 bunch 

Directions

Rub Blackening Spice on Fish and grill till cooked through.  Set aside.  Squeeze juice of one lime and drizzle in olive oil, season with salt and pepper.  Remove kernels off the cob and sauté with a drizzle of oil till cooked.  Once corn is cooked, add minced jalapeño, cumin, chili powder, lime vinaigrette, salt and pepper.  Stir in chopped tomatoes once the corn mixture has cooled down.   

To plate

Dress baby spinach with lime vinaigrette.  Top with Corn Salad and Blackened Tilapia.

Ingredients

 

Heirloom tomatoes

Fresh basil leaves

Extra Virgin Olive Oil

Balsamic Vinegar

Salt and Pepper

 

Directions

 

Slice tomatoes ¼ to ½ inch thick.  In the center of the plate stack one slice of tomato and top with fresh basil, repeat two or three times.  Drizzle olive oil and balsamic vinegar over the top and sprinkle with salt and pepper.

1 lb lentils

3 – 4 cloves garlic

salt

12 white potatoes, skinned

4 cups spinach, chopped

4 tbsp olive oil

3 tbsp vinegar

¾ cups green onion, thinly sliced

½ cup parsley, chopped

½ tsp red pepper flakes

fresh black pepper

 

Pour boiling water over lentils and let soak for 30 minutes.  Drain.  Put into water with 2 cloves peeled garlic.  Bring water to boil.  Reduce heat to simmer 15 minutes.  Drain, discard garlic.

Boil potatoes in skins in salted water until tender.  Dice into ½” pieces.

Wash spinach, discard stems.  Chop coarsely.  Sauté spinach in 1 tbsp oil & 1 chopped garlic until spinach wilts & excess liquid cooks away.  Sprinkle 1 tbsp vinegar and toss.

Combine drained lentils, diced potatoes sautéd spinach & garlic, green onions, pepper flakes & parsley.  Add remaining 3 tbsp oil, 2 tbsp vinegar, salt pepper & toss.  Let stand 30 minutes.
