This is one of my favourite drinks.

Before baking in parchment envelopes... Red snapper, Ginger, green onion, snap peas, tomato, lime, mint, coconut milk. They all steam together, there is no after picture because we ate them right up. With a sauce made of coconut milk, chili, ginger, cumin and lime. Will make again fo dinner soon.
Truth be told, they're on my hard drive... in jpg form... but to get them there, I made a special request.
Martin is a photographer living in Germany that I've used via iStockphoto to shoot specific photos when I've needed them for my business. When he mentioned he was heading to Brazil, I casually asked him something like: "if you happen to see coconuts while you're there... specifically with a Brazilian cutting one... or processing it... or anything like that..." I needed them to showcase one of my product ingredients, coconut oil. Fast-forward a few weeks and the photos are available to me via iStock. Now I would have loved to fly to Brazil and photograph the coconuts myself, so I did the next best thing and asked Martin to tell me more about the context of the shots. Here's what he told me:The coconuts are practically everywhere you go, especially at the beaches and markets. These pics were taken at a beach near Ubatuba. Quite a funny story, we weren't too lucky with the weather, so we went to this very beautiful beach which was practically empty, nobody there, except a couple selling some fried food and coconuts from their pick-up truck. They were really nice people and happy to have customers that day since we were the only people there. They were more than happy to let me take some shots :) I don't know about California but over here you don't get these fresh green coconuts, only once they are dried and brown (and then they usually taste awful). However, there is nothing more refreshing than a fresh coconut, you can drink from it with a straw. I miss them already!
Now that I'm coco for coconuts, I went to another source to learn more. My uncle, who's married to a Brazilian, shared this:
The coconuts I've seen on trees in Brazil & Hawaii were green. You poke a hole in them to drink the juice, but the solid part inside is still under developed at that stage...when the green coconut ripens it turns yellow. They are then left in the sun to dry until the yellow outer shell hardens. This is then removed (probably with a hammer or hammer /chisel combination), and the familiar brown nut is found inside it.
You see? It never hurts to ask.

There's a quiz in my department and one of the question is, "Which fruit has the most calories?" Google to the rescue!!! It appears to be coconut / avocado.
